  1. Measure the water: For one bag, add 12 cups of filtered water to a clean pot. If you're using both bags, pour in 24 cups of water. Each bag will yield approximately 2 quarts of tea, although the final amount might differ due to water evaporating while simmering.

  2. Mix herbs with water. Stir the herbs into the water. If you're using a tea ball, immerse it in the water.

  3. Simmer gently: Turn on the heat and allow it to simmer with the lid on for approximately 10 minutes. Avoid vigorous boiling to preserve the herbs' properties.

  4. Steep: After turning off the heat, leave the cover on and allow the tea to steep for 8-10 hours or overnight.

  5. Strain and bottle: Heat the tea until it briefly boils, then turn off the heat. This step eliminates any bacteria that might have entered the tea. If using a funnel with a strainer, pour the tea from the initial pot into your sterile container. If you are not bottling immediately, do not bring the initial pot to a boil. Instead, strain the tea into another pot, bring that second pot to a quick boil, and then turn off the heat. Transfer the tea into your sterile container and cap it immediately.

  6. Store: Refrigerate the tea. It generally spoils within 4-6 weeks. Signs of spoilage include a very strong odor, an "off" taste, a gelatinous texture, or floating particles on the surface of the tea.
